Plated 5-Ingredient Frittata with Broccoli & Feta

Start your day with this simple 5-ingredient frittata that’s bursting with colour and flavour. Packed with tender broccoli, sweet peppers and tangy feta, it’s a wholesome dish that feels just as at home on the breakfast table as it does at lunchtime.

Quick to prepare, nourishing and naturally full of goodness, this frittata makes healthy eating both effortless and delicious.

Ingredients

  • 2 tbsp olive oil
  • 6 eggs, whisked with a fork
  • 300g PACK’D Organic Frozen Broccoli
  • 50g kale, chopped
  • 100g roasted red peppers, diced
  • 50g feta
  • Good pinch of salt and pepper

Method

Add broccoli to a bowl of boiling water to thaw for 1 minute. Drain and pat dry on kitchen paper.

Heat 2 tbsp olive oil in a 10 inch non-stick frying pan or well-oiled skillet over a medium heat. Add the broccoli and a pinch of salt and pepper and cook, stirring occasionally, until the broccoli is tender but still green, about 3 - 4 minutes.

Stir in the kale and red pepper, then add the egg mixture and gently shake the pan to distribute. Sprinkle with the feta and cook for about 10 minutes on a medium / low heat so as not to burn the bottom, then add the lid and cook for a further 5 mins or until the eggs are set.

Season to taste and serve.
