Blueberry & Goat's Cheese Salad

Ingredients

  • 80g spring mix or baby rocket
  • 60g PACK'D Organic Blueberries
  • 60g creamy GOAT CHEESE sliced log, or crumbled
  • 1/2 large avocado, sliced
  • 2 radishes, thinly sliced
  • 35g toasted WALNUTS or PINE NUTS, chopped
  • Salt and pepper to taste
  • 1 tbsp dill, chopped

Dressing

  • 2 tbsp olive oil
  • 1/2 tsp DIJON MUSTARD
  • 1 tsp Red wine or apple cider vinegar
  • Pinch of salt and pepper

Method

Add washed mixed greens to a large bowl.

Scatter blueberries, avocado, radishes and nuts over the top.

In a small bowl, whisk together the dressing.

Drizzle the dressing over the salad. Option to toss gently.

Top with sliced goat cheese and fresh dill to serve.
