Blueberry & Goat's Cheese Salad
This fresh, no-cook salad brings together peppery greens, creamy goat's cheese, and bursts of sweet-tart blueberry for a plate that feels indulgent yet effortless. Ingredients
- 80g spring mix or baby rocket
- 60g PACK'D Organic Blueberries
- 60g creamy GOAT CHEESE sliced log, or crumbled
- 1/2 large avocado, sliced
- 2 radishes, thinly sliced
- 35g toasted WALNUTS or PINE NUTS, chopped
- Salt and pepper to taste
- 1 tbsp dill, chopped
Dressing
- 2 tbsp olive oil
- 1/2 tsp DIJON MUSTARD
- 1 tsp Red wine or apple cider vinegar
- Pinch of salt and pepper

Method
Add washed mixed greens to a large bowl.
Scatter blueberries, avocado, radishes and nuts over the top.
In a small bowl, whisk together the dressing.
Drizzle the dressing over the salad. Option to toss gently.
Top with sliced goat cheese and fresh dill to serve.
