Burrata, Tomato & Cherry Salad
There's nothing quite like a tomato salad at its peak, and this one keeps things effortless. Ripe heirloom and cherry tomatoes meet creamy burrata, torn basil and a glossy drizzle of olive oil and balsamic, with PACK'D Organic Cherries adding a sweet, juicy twist.

Ingredients
- 2 medium heirloom tomatoes (250g)
- 300g cherry tomatoes, halved
- 150g PACK'D Organic Cherries, thawed & halved
- 10 leaves fresh basil, torn
- 1 large BURRATA ball
- Good pinch of flakey sea salt
- Good pinch of cracked black pepper
- 2 - 3 tbsp extra virgin olive oil to taste
- 1 - 2 tsp balsamic vinegar to taste

Method
Slice the heirloom tomatoes about 1/4" thick and arrange on a serving platter. Halve the other cherry tomatoes and arrange on top with the cherries.
Tear the burrata into pieces and lay on top of the tomatoes.
Sprinkle the salt and pepper evenly over the top of the tomatoes and burrata, then drizzle over the extra virgin olive oil and balsamic vinegar and finish with torn basil.
