Chipotle tofu tacos with coriander guacamole
Shake up your weeknight dinner rotation with these Crispy Chipotle Tofu Tacos. By grating the tofu and baking it twice, you create an irresistible, chewy texture that soaks up our smoky chipotle spice blend—a perfect plant-based alternative to ground meat.
We’ve paired it with a zesty, creamy guacamole made using our perfectly ripe PACK’D organic avocado chunks, saving you the lottery of finding a good fresh avocado. Fresh, high in protein, and packed with flavour.

TOFU
- 1 x 280g package super-firm tofu, rinsed + pressed in kitchen paper
- 1 tsp chipotle chilli powder or to taste
- 1 tsp smoked paprika
- 3/4 tsp ground cumin
- 1/2 tsp garlic powder
- Pinch chilli flakes to taste
- 1/3 tsp dried oregano
- 1/2 tsp flakey salt
- 1 tbsp olive oil plus more to serve
Coriander Guacamole
- 300g PACK'D Organic Avocado, thawed
- 1/2 tsp PACK'D Organic Garlic or 1 garlic clove, minced
- Pinch of salt and pepper
- Optional 1/2 jalapeno, finely diced
- 1 tbsp coriander, finely chopped
- 2 tsp lime juice
To serve
- 6 soft flour tortillas
- 30g red cabbage, finely shredded
- Pink pickled onions
- 1 spring onion, sliced on the bias
- 50g feta, crumbled
- 1 tbsp fresh coriander, chopped
Method
Grate the tofu using a box grater or in a food processor with a grating blade.
Add grated tofu to a parchment lined baking tray and par bake for 35 minutes, stirring a few times until slightly crisp.
Meanwhile, make the sauce: In a small bowl, whisk together the chipotle chilli powder, paprika, cumin, garlic powder, chilli flakes, oregano, and salt, olive oil and add 1 tbsp water.
Add sauce to crisped tofu in baking tray and stir to fully coat. Place back in the oven for 10 minutes until crispy.
Mash / toss avocado with all the guacamole ingredients and season to taste.
Warm / char tacos and top with red cabbage, tofu, pink pickled onions, spring onions, feta, coriander and a drizzle of olive oil.
