Hidden Veggie Pasta Sauce

Ingredients
- 2 tbsp olive oil
- 100g Pack’d onion
- 150g Pack’d sweet potatoes
- 2 carrots (150g), diced
- 1 red pepper, diced (100g)
- 1 courgette, diced (180g)
- 2 tsp Pack’d garlic
- 1 tsp dried basil
- 1/2 - 1 tsp flakey salt to taste
- 1/3 tsp black pepper
- 250ml passata tomato sauce
- 125ml stock or water
- 1 tsp lemon juice
- 300g pasta
To Serve
- Shaved parmesan
- Fresh basil, chopped
Method
Heat the olive oil in a soup pan. Add the onion, sweet potato, red pepper and courgette and cook on a medium heat, stirring occasionally, until the veggies are soft, about 10 minutes. Add the garlic, dried basil, salt and pepper for 30 seconds until fragrant.
Add the passata tomato sauce and stock or water. Reduce the heat to low and simmer for 15 minutes.
Add to a high speed blender with lemon juice and blend on high until smooth.
In the meantime, cook your pasta of choice in boiling salted water until al dente. Drain.
Add the pasta sauce to the pasta and stir to combine. Add a touch of pasta water to thin if needed.
Garnish with parmesan, fresh basil and a good drizzle of olive oil.
