High Protein Edamame and Artichoke Salad

We’ve combined our protein-rich PACK’D Organic Edamame with fibre-packed chickpeas, salty feta, and tangy marinated artichokes for a satisfying crunch that keeps you full all afternoon.

Ingredients

  • 1 x 400g tin chickpeas, drained + rinsed
  • 120g PACK'D Organic Edamame
  • 2 sticks celery, diced (90g)
  • 1/2 large cucumber, diced (180g)
  • 1 small avocado, diced
  • 100g marinated artichokes in oil, chopped
  • 12 nochellara olives, pitted + diced
  • 2 tbsp capers, chopped
  • 100g feta, crumbled
  • 3 tbsp pumpkin seeds, roasted
  • 1 tbsp coriander, finely chopped
  • 1 tbsp dill or basil, finely chopped

Dressing

  • ¼ cup extra virgin olive oil
  • 1 tsp dijon mustard
  • 1/4 tsp red wine vinegar
  • Good pinch of salt + pepper 

Method

Place the edamame in a mug of boiling water and allow to rest for 5 mins. Drain and set aside.

Whisk together all the dressing ingredients or shake in a jar to emulsify.

In a large mixing bowl, toss together all salad ingredients until well mixed and toss through as much dressing as you like. Option to season to taste with salt and pepper.
