Immunity boosting tofu
            
          Boost your immune system with this nutrient-rich Tofu and Cauliflower Rice Bowl. Packed with vitamins C and K from PACK'D organic cauliflower rice, plus protein and iron from tofu, this dish supports immunity while delivering great flavour.
The marinated tofu skewers are perfectly paired with a lemony, herbed cauliflower rice, seasoned with za’atar and chili flakes for a subtle kick. This wholesome, plant-based meal is both healthy and delicious, ideal for a quick weeknight dinner.
Ingredients (makes 2 servings):
For the tofu:
- 250g tofu
 - 2 tbsp syrup
 - 2 tbsp olive oil
 - 2 tbsp finely chopped coriander
 - Zest of ½ a lemon
 - Juice of 1 lemon
 - Salt and pepper to taste
 
For the quinoa-rice:
- 450g PACK'D organic cauliflower rice
 - Zest of ½ a lemon
 - 1 tbsp olive oil
 - 1 tbsp chopped parsley
 - 1 tbsp chopped coriander
 - 1 tsp za’atar
 - ½ tsp chili flakes
 - Sesame seeds (optional)
 
Method:
- Preheat the oven to 200°C. Mix olive oil, lemon juice, zest, maple syrup, and coriander for the marinade.
 - Press the tofu then cut into cubes and marinate as long as possible.
 - Thread tofu onto skewers, drizzle with half the marinade, and roast for 30 minutes, turning and drizzling halfway.
 - Sauté PACK’D cauliflower rice with oil and salt until browned, then mix with lemon zest, parsley, coriander, za’atar, and chili flakes.
 - Serve tofu skewers over cauliflower rice, drizzle with remaining marinade and enjoy!
