Melon, burrata and mango salad
When the weather turns warm, this melon, burrata and mango salad is exactly the kind of thing you want on the table — fresh, vibrant, and ready in fifteen minutes with no cooking required. Ingredients
- 1/2 ripe honeydew or gala melon (350g)
- 1/2 cantaloupe melon (350g)
- 1 - 2 BURRATA (125g each)
- 150g PACK'D Organic Frozen Mango, thawed
- Fresh basil and mint, torn to taste
Dressing
- 3 tbsp olive oil
- 2 tsp red wine vinegar
- 1/2 tsp DIJON MUSTARD
- Pinch salt and pepper

Method
Mix the dressing in a small jar or bowl.
Remove the seeds from the melons and slice.
Arrange the melon slices and mango on a platter, drizzle with most of the dressing. Ideally leave to macerate for 10 minutes.
Nestle the burrata into the salad, gently tear each ball open and season with a little flaky sea salt.
Spoon over the remaining dressing and top with fresh herbs.
