Mini sage and onion stuffing bites

Made with sourdough for a satisfying texture and fragrant herbs, these bites are the perfect crispy, savoury accompaniment to any festive feast or weekend family meal.

Ingredients

• 2 tsp butter
• 1 tbsp olive oil
• 1/2 cup / 60g g PACK'D Organic onion, thawed and water squeezed out using muslin cloth or strong kitchen paper
• 1 bay leaf
• 1 tsp PACK'D Organic chopped garlic 
• 1 tbsp dried sage
• 1 tsp dried thyme
• 120g sourdough bread (or regular bread if you prefer) - a few days old is best
• 1 egg, beaten
• 1/2 tsp flakey salt
• 1/4 tsp black pepper

Method 

• Heat butter and olive oil in a frying pan over medium/ low heat heat. Fry onions with bay leaf, salt and pepper for 5 - 6 minutes until soft and translucent. 
• Add garlic, sage and thyme and fry for 1 minute until fragrant. Allow to cool for 5 mins.
• Preheat oven to 180C / 160 fan. 
• Blitz bread to form breadcrumbs. Add to a mixing bowl with the cooled onion mix and egg and salt and pepper. Mix to combine. 
• Spray mini silicone muffin cases (5cm wide x 2 cm tall) with olive oil and place on a baking tray. Add filling and flatten. Spray the tops well with olive oil. Option to just roll into balls and spray well with olive oil if you prefer.
• Bake 10 - 12 minutes till golden. Note — Cooking times and denseness of bites will depend on the bread used. Option to spray with more oil to serve.
