Ingredients
- 50g walnuts, toasted, diced small
- 110g PACK’D Organic Pomegranate Arils
- 50g olives, pitted, diced small
- 2 tbsp Parsley, finely chopped
- 1 tbsp mint, finely chopped
- 1 tbsp dill, finely chopped
- 125g cherry tomatoes, diced small
- 1 red pepper, diced small
- 50g feta, crumbled
- 100g cucumber, diced
- Optional 2 spring onions, finely chopped
Dressing
- 3 tbsp olive oil
- 1/2 tsp dijon
- 1/4 tsp Red wine vinegar or apple cider vinegar
- 1/2 tsp dried oregano
- Pinch of sumac
- Pinch of salt and pepper
Method
Add dressing ingredients to a jar and shake well to emulsify or whisk in a bowl.
Add all the salad ingredients to a bowl and toss to combine.
Toss dressing through salad and serve.
