Ingredients

  • 50g walnuts, toasted, diced small
  • 110g PACK’D Organic Pomegranate Arils
  • 50g olives, pitted, diced small
  • 2 tbsp Parsley, finely chopped
  • 1 tbsp mint, finely chopped
  • 1 tbsp dill, finely chopped
  • 125g cherry tomatoes, diced small
  • 1 red pepper, diced small
  • 50g feta, crumbled
  • 100g cucumber, diced
  • Optional 2 spring onions, finely chopped

Dressing

  • 3 tbsp olive oil
  • 1/2 tsp dijon
  • 1/4 tsp Red wine vinegar or apple cider vinegar
  • 1/2 tsp dried oregano
  • Pinch of sumac
  • Pinch of salt and pepper

Method

Add dressing ingredients to a jar and shake well to emulsify or whisk in a bowl.

Add all the salad ingredients to a bowl and toss to combine.

Toss dressing through salad and serve.
