Raspberry Tiramisu Jars

PACKD raspberry and tiramisu served in a selection of 3 jars

Put a fresh, fruity twist on the Italian classic with these vibrant Raspberry Tiramisu Jars. We’ve swapped the traditional coffee soak for a zesty compote made using PACK’D Organic frozen raspberries and a splash of orange juice.

Layered with a ginger-spiked mascarpone cream and sponge fingers, these individual pots are a sophisticated, no-bake dessert that can be made the night before for stress-free entertaining.

Serves

  • Makes 3 large or 4 smaller

Ingredients

  • Zest of 1/2 medium orange
  • 1 tbsp orange juice (I used the orange I zested) or Gran Marnier if you prefer alcohol
  • 500g PACK'D Organic Raspberries
  • 1.5 tsp cornflour or tapioca starch
  • 125g mascarpone cheese, room temperature
  • 3/4 cups heavy cream
  • 1 tbsp maple
  • 1/2 tsp vanilla extract
  • 1/8 tsp ground ginger
  • 6 lady fingers

To serve

  • Dark chocolate, shaved
  • Fresh raspberries

Method 

  • Add frozen berries to a small non-stick frying pan and cook on a medium / low heat for 6 - 8 mins till thick. Add orange juice and corn or tapioca starch to thicken. Allow to cool.
  • Set aside.
  • Mix the mascarpone with the orange zest, maple and ginger in a mixing bowl. Set aside.
  • In a clean mixing bowl, whip the cream and vanilla, with an electric whisk until just under peaks. Don’t over whip.
  • Gently fold 1/2 of the whipped cream into the mascarpone cheese mixture. Then, fold in the remainder until smooth.
  • Dip the ladyfingers a few at a time into the raspberry sauce, coating both sides. Break each finger into 3 and arrange 3 broken lady fingers in a jar with a little of the sauce.
  • Spread half of the whipped cream-mascarpone mix over the ladyfingers.
  • Repeat layering with remaining ladyfingers, and whipped cream mix.
  • Cover with tin foil and chill in the refrigerator for at least 8 hours / overnight to let ladyfingers soften.
  • After chilling, top with a little of the leftover raspberry sauce, fresh raspberries and some grated dark choc.

This is the ultimate stress-free dinner party pudding because it actually tastes better when made in advance. We recommend assembling these jars the night before serving.

This essential resting time allows the sponge fingers (ladyfingers) to fully absorb the tart raspberry juices and creamy mascarpone, transforming them into that classic, soft tiramisu texture. They keep perfectly in the fridge for up to 3 days, ready to grab whenever you need a sweet treat.
