Sweet Potato Poke Bowl
Bring the vibrant flavours of Hawaii to your kitchen with these plant-based Sweet Potato & Cauliflower Rice Poke Bowls. We’ve swapped traditional white rice for our light, nutrient-dense PACK’D organic cauliflower rice, seasoned to perfection.
Topped with caramelised, ginger-soy roasted sweet potatoes and a zesty citrus mayo, this bowl is a textural delight—fresh, crunchy, and satisfying. Perfect for a light lunch or dinner that packs a nutritional punch without the carb-heavy slump.

Cauliflower rice
- 1 tsp rice vinegar or apple cider vinegar
- 1/2 tsp toasted sesame oil
- 1/4 tsp sea salt
- 1 packet PACK'D Organic Cauliflower Rice (450g)
Poke
- 2 tbsp low-salt soy sauce or tamari
- 1 tsp toasted sesame oil
- 1 tsp seasoned rice vinegar or acv
- 1 tbsp ginger, grated
- 1/2 tsp maple
- 1 packet PACK'D Organic Sweet Potatoes (450g)
Citrus mayo
- 3 tbsp mayonnaise
- 1/2 tsp wasabi paste (optional)
- 1.5 tsp lime juice
- 1/2 tsp toasted sesame oil
Toppings (optional)
- Pickled ginger, drained
- 50g cucumber, thinly sliced
- 70g red cabbage, finely shredded
- 2 spring onions, finely sliced
- 1 small avocado, diced
- 1 mango, diced
- 1/2 tsp furikake or toasted sesame seeds
- Toasted nori strips, torn
Method
Make the seasoned cauliflower rice: microwave cauliflower rice for 4 minutes or steam then squeeze out the water using a muslin cloth or strong kitchen roll. Toss cauliflower rice with vinegar, sesame oil and salt.
Make the Poke: Preheat the oven to 200C / 180 fan and line a baking tray with parchment. Add the sweet potatoes and a drizzle of olive oil and par roast 20 mins. Meanwhile in a bowl, whisk together the soy sauce, sesame oil, rice vinegar, ginger and maple. After 20 minutes toss through sweet pots and cook for another 10 mins or until the sweet potatoes are cooked.
Make the citrus mayo: mix ingredients together in a small bowl.
Assemble bowls: To assemble, divide the rice between 2 bowls and top with the sweet potatoes and desired toppings. Drizzle with mayo.
