Vanilla cashew matcha overnight oats

Ready in just minutes (or overnight), these oats are made for busy mornings or grab‑and‑go days. Cashew milk, yoghurt, vanilla, and a touch of maple blend into a smooth, dreamy base that feels both energising and comforting.

  • Total 15 mins or overnight
  • Storage Sealed glass jars in the fridge for 2 days

Ingredients

  • 90g oats
  • 1 tbsp chia seeds
  • 65g PACK'D Organic Frozen Banana, thawed
  • 1 tsp matcha powder
  • Pinch of salt
  • 250 ml cashew milk
  • 80ml Greek yoghurt, kefir yoghurt or plant-based yoghurt
  • 1 tsp vanilla extract
  • 2 tsp maple or honey

To serve

  • 1 tbsp toasted cashews, chopped
  • Optional spoonful of yoghurt

Method

  1. Mash the thawed banana with a fork.
  2. Add mashed banana to a bowl with the oats, chia seeds, matcha, salt, cashew milk, yoghurt, vanilla and sweetener. Stir to combine.
  3. Cover the bowl and place in the fridge overnight or for at least 10 minutes.
  4. Top with cashews and optional yoghurt to serve.
