This vegan-friendly dish combines farfalle pasta with fresh vegetables, vegan feta, and a zesty homemade vinaigrette. Perfect for a light lunch or side dish, this salad is not only delicious but also supports a healthy gut. Enjoy it fresh and top with pumpkin seeds and extra mint for added flavour and texture.

Ingredients (makes 4 servings)

Vinaigrette

  • 30ml olive oil
  • Juice of ½ a lemon
  • 1 tbsp white wine vinegar / cider vinegar
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Optional: top with pumpkin seeds and chopped mint

Method

  • Cook the pasta according to the package instructions.
  • Defrost the PACK’D sweetcorn and petit pois.
  • Dice the peppers and onion.
  • Mix the vinaigrette ingredients together.
  • Mix the pasta, veggies, feta and vinaigrette together.
  • Top with pumpkins seeds and serve.
