Super Easy Banana and Almond Waffles recipe

Ingredients

  • 1/2 cup ground almonds (60g)
  • 1/4 cup gluten-free flour (30g)
  • 5 tbsp oat flour
  • 2 tbsp tapioca flour
  • 2 tsp baking powder
  • 1 cup almond milk (60ml)
  • 2 tbsp vegan butter or coconut oil, melted (plus more for greasing)
  • 1.5 tsp vanilla extract
  • 1/2 tsp apple cider vinegar
  • 1 tbsp peanut butter
  • 1/2 cup frozen PACK’D banana slices (60g)

Toppings

  • 2 tbsp flaked almonds, toasted
  • 2 - 3 tbsp peanut butter
  • Optional: 1 tbsp cacao nibs or chocolate chips
  • Optional: Fresh banana slices

Method

  1. In a small mixing bowl, combine the ground almonds, gluten-free flour, oat flour, tapioca flour, and baking powder. Mix them together and set the mixture aside.
  2. In a high-speed blender, combine almond milk, melted vegan butter or coconut oil, vanilla extract, apple cider vinegar, peanut butter, and frozen banana slices. Blend until you have a smooth, creamy mixture.
  3. Gradually add the flour mixture to the blender, blending on medium/high speed. Stop to scrape the sides as needed until you achieve a smooth batter. This should take about 1 minute.
  4. Preheat your waffle maker and lightly grease it with oil.
  5. Pour the batter into the waffle maker and cook until they're golden and crispy, typically about 3-4 minutes
  6. Once done, transfer your waffles to a wire rack to cool and firm up slightly.
  7. Now, for the fun part – toppings! Spread a generous layer of peanut butter on top of your waffles and sprinkle them with toasted flaked almonds. For an extra treat, you can also add cacao nibs or chocolate chips if you have a sweet tooth. And of course, don't forget to garnish with fresh banana slices
  8. Serve your Almond Flour Banana Waffles warm and enjoy your delightful, guilt-free breakfast!
