5 Ingredient Tomato Feta Eggs Traybake

Ingredients
- 600g cherry tomatoes
- 2 tbsp olive oil
- Salt + pepper
- 200g feta, crumbled
- 1 tsp dried oregano
- 4 - 8 large eggs (we did 5)
- 200g PACK’D Organic frozen Spinach
To Serve
Basil / fresh oregano leaves, torn (optional)
Method
Preheat the oven to 200C / 180 fan. On large rimmed baking sheet, toss the tomatoes with 1 tbsp olive oil and a good pinch salt and salt and pepper. Roast until tomatoes start to release liquid and break down, about 10 minutes.
Add the frozen spinach to bowl of boiling water for 1 minute. Transfer to a muslin cloth or a few sheets of strong kitchen paper and squeeze out the water.
After the tomatoes start to soften, sprinkle the tray evenly with feta and dried oregano. Create wells and crack 1 egg into each well and dot with spinach.
Bake until egg whites are set - about 10 minutes more. Sprinkle with basil or oregano, salt and pepper to serve and drizzle with 1 tbsp olive oil.
