Vegan Creamed Spinach
Creamy, comforting, and quick to prepare, this Vegan Creamed Spinach is the perfect side dish for any meal. Made with PACK'D organic frozen spinach, coconut milk, and a touch of dijon mustard, this dairy-free recipe is rich, flavourful, and ready in just 10 minutes.
Perfectly seasoned with paprika and nutmeg, it’s a great addition to your table. Store leftovers in the fridge for up to 3 days for an easy reheatable side.

Ingredients
- 2 tbsp vegan butter or olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 bag / 450g PACK’D organic frozen spinach
- 435ml / 1 3/4 cup full-fat coconut milk (from a can)
- 1/2 tsp dijon mustard
- Pinch of nutmeg (optional)
- Pinch of paprika
- Salt and pepper, to taste
- 2 tsp corn or tapioca starch
- 1/4 cup vegan cream (optional)
Method
Melt the vegan butter or olive oil in a large non-stick frying pan over a medium heat. Add the onion and cook for 4 minutes, stirring occasionally, until soft and translucent. Stir in the garlic and cook for 1 minute.
Add the spinach then drizzle in the coconut milk, stirring until smooth. Stir in the dijon, optional nutmeg, paprika, salt, pepper and starch. Cook for 3 - 4 minutes until it thickens. Add optional vegan cream and stir to combine(recommended as this makes it thicker and creamier).
Adjust seasoning to taste and option to drizzle with more olive oil or knobs of vegan butter to serve.
